Produced from Xinomavro and Moschomavro grapes. Our vineyards are located on the slopes of mountain in PGI Siatista zone.
We use the method “Blanc de noirs” so the wine to retain its freshness, fruity aromas and nervousness of the grapes.
Blanc de noirs, i.e. “white from black” is a French term describing a white wine produced from red grapes.
Many people believe that red wine comes from red grapes and white wine comes from green grapes but they are this is wrong. Juice from grapes is white no matter the variety of grapes comes from. If the juice comes in contact with with the bark of red grapes dyes will be washed by this and the color of wine will be changed. These pigments belong to a family of compounds called “anthocyanins” which are responsible for the coloring of many fruits and vegetables, grapes juice is allowed to ferment after separated from the bark so the result is ahite white wine also known as “blanc de noirs”.
