``Blanc des noir``

Winemaker notes

Produced from Nakos winery another excellent wine, from varieties “Xinomavro” & “Moschomavro” using organic cultivation at our mountainous vineyards at Siatista.

We use the method “Blanc de noir” in order the wine to retain its freshness, another benefit its the fruity aromas and nervousness of its varieties from which it is produced.

Blanc de noir , i.e. “white from black” is a French term describing a white wine produced from red grapes.

Many people believe that red wine comes from red grapes and white wine comes from green grapes but they are wrong. Juice from grapes is white no matter the variety of grapes comes from. If the juice comes in contact with with the bark of red grapes dyes will be washed by this and the color of wine will be changed. These pigments belong to a family of compounds called “anthocyanins” which are responsible for the coloring of many fruits and vegetables, grapes juice is allowed to ferment after seperated from the bark so the result is ahite wine also known as “blanc de noirs”.
